SDMC Servery & Dining

Taking two years to complete, the SDMC Servery and Dining project was finished in March of 2013 accommodating the new objectives within the existing 28,451 square foot space. The reconfiguration of the only servery and dining space for a 463,406 square foot facility that serves 1,900 meals per day in the cafeteria involved strategic placement of popular selections, close attention to waiting line locations, and the addition of enticing interior details to draw patrons through the space contributing to better traffic flow.

The project objectives were to eliminate the “institutional” look of the old space, improve traffic flow, increase menu variety through new retail stations and add more display cooking. The client’s goal was to see an increase in their current transaction volume and seat diners in a serene, relaxing space, with food stations including; grill, chef’s special, deli, pizza oven and Italian, grab-and-go, beverages and a self-service island with salad bar and daily specials.
